Ingredients
Premium aged beef tenderloin, clarified butter, Madagascar green peppercorns, cognac, heavy cream, beef demi-glace, garlic, fresh thyme, roasted potatoes, sea salt.
Preparation
Tenderloin is brought to room temperature, then seared in clarified butter. Rested while the pan sauce is prepared with cognac, green peppercorns, and cream. Finished with a demi-glace for depth.
