Ingredients
Egg whites, sugar, vanilla beans, whole milk, egg yolks, caramel, pinch of salt.
Preparation
Egg whites are whipped to stiff peaks, shaped into quenelles and poached in milk. The poaching milk becomes the base for the crème anglaise. The caramel is spun just before serving.
