    Ingredients

    Beef tenderloin, beef cheek, beef tartare, potatoes for paillasson, red wine, beef stock, shallots, thyme, butter, sea salt, black pepper, microgreens.

    Preparation

    The tenderloin is seared to your preference, the beef cheek is braised for 6 hours until tender, and the tartare is formed into a croquette and lightly fried. The paillasson is made with hand-grated potatoes, fried until golden and crispy.
